Black Bean Chili
 
 
 
A great healthy meal to try on your own is this Black Bean Chili. This recipe is simple and cheap. You will have leftovers for days and it fits into your College Budget. You can find most of the canned vegetables at your local Grocery store (or Wal-Mart) for around a dollar.

Ingredients
  • 1 lb lean ground beef or ground turkey
  • 1½ cups beef broth
  • 1 tbsp chili powder
  • 1½ tsp ground cumin
  • ¾ tsp dried oregano
  • ½ tsp salt
  • ⅛ tsp pepper
  • 3 garlic cloves, crushed
  • 2 cans black beans, drained
  • 1 can diced tomatoes
  • 1 can diced tomatoes with green chilies
 
Instructions
  1. Brown ground beef or turkey.
  2. In large pot, combine all ingredients and bring to a boil.
  3. Turn down heat and simmer for 20 minutes.
  4. Serve warm and garnish with cheese, sour cream and green onions if desired.

    Cool, thanks for the chili recipe. Great time of year for it and makes me want to try some this weekend with all this cold weather. As a busy Mom as well, this is very helpful to have some new ideas given to me that I can read on-line in the kitchen while cooking!

  3. This is a great recipe! It is always nice to switch things up every once and while with some new recipe ideas. Dips are always great for entertaining and they are great leftovers, too! It is also nice and cheap for a college student budget....I will be sure to use this in the near future!
